Abstract :Under the basic act on food education and new government course guidelines, an educational solution is required to maintain tradition and culture. Sesame seeds are mainly imported, but in recent years, domestic production of sesame seeds has been increasing, especially in Kyushu. In this study, we investigated the current state of sesame cultivation in Kyushu and traditional cooking, such as local cuisine using sesame seeds, to clarify the significance of teaching materials, including the steps from the cultivation to application of sesame seeds. The cultivation of sesame seeds was easy for amateurs, and since they can be stored after harvesting, they can be used for cooking practice in home economics classes. In Kyushu, various vegetable or fish dishes that combines sesame seeds have been eating, so teaching materials on sesame seeds can be linked with the spread of the washoku-style Japanese meal.
